garam masala spiced banana bread
This aromatic banana bread is addictive. Enjoy warm for breakfast, mid-morning or late night snack, or anytime in-between!
Ingredients
- 1 cup oat flour
- ¾ cup coconut flour
- 1 tsp baking soda
- ½ tsp pink himalayan sea salt
- ½ tsp ground cinnamon
- ½ tsp garam masala (found in most ethnic stores)
- 2 tbs hemp seeds
- ½ cup plus 2-3 tbs coconut oil or ghee
- ¼ cup honey
- ¼ cup maple syrup
- 3 eggs or flax eggs
- 2-3 mashed ripe bananas
- 1 tsp vanilla
- ½ cup coconut or nut milk
Optional
- ¼ cup cacao nibs
- pumpkin seeds or nuts
Instructions
- Preheat oven to 325°F
- Mix dry ingredients
- Use a bit of ghee/coconut oil to grease standard loaf pan
- Whisk ghee/or oil, honey and syrup
- Mash bananas
- Add eggs or flax eggs and whisk well after each one
- Add banana, vanilla and milk and whisk all together
- Add dry ingredients ½ cup at a time to wet ingredients making sure to mix well but not over-mix
- Pour into greased pan and spread evenly
- Bake in middle of oven for one hour (or until toothpick comes out clean)
- Cover with a cloth and let cool (this helps retain moisture)
Notes
Slice and serve warm. Add a slather of ghee or coconut oil for pure decadence!
